Simple cakes are cakes that people would bake when friends come over, or as a desert at a celebration.

You may find this kind of cake at a country side lunch place, where they offer a small piece with the lunch coffee. Or you make a motorbike tour through Finland in the summer and stop at one of the numerous “kesäkahvila” (summer cafe) and get yourself a coffee and a Rhubarb cake.

The simple classical cakes use ingredients from the garden or forest like apples, black or red-currents, gooseberries, lingonberries, blue berries or rhubarb. They are easy to prepare and commonly enjoyed.
