Granny’s Apple Pie - Mummon Omenapiirakka

Finland has some very tasty apple varieties, but they are often a bit smaller then the central European Apples. Many detached houses from the 70 or 80ties have a couple of apple trees in their garden. Many lake cottages have also an apple tree or two in their yard. Sometimes in good apple years, people put small bags of apple with a pot next to it at the street for sale, or people bring apples to their work place for collogues to take home.
This is a simple straightforward cinnamon flavored apple pie, best still slightly warm with vanilla ice cream and a good cup of coffee on the terrace.
Ingredients:
100 g Melted butter
2 1/2 dl Buttermilk (if you don’t have buttermilk, normal milk is also doing the job)
2 Large Eggs
1 dl Sugar
1 tsp Vanilla sugar
4 dl Wheat flour
2 tsp Baking powder
1 tsp Cardamon (you can also use cinnamon)
3 Normal sized apples or 4 small ones
2 tsp Cinnamon
2 Tbsp Brown sugar
Instructions:
Mix the melted butter with the buttermilk and the eggs. Add sugar and Vanilla sugar and stir well. Mix flour, cardamon and baking powder and add in small batches to the egg mix. Stir well so that there are no lumps. The dough should be pourable, but no very liquid.
Peel, remove the seeds and cut the apples quarters into slices. Pour the dough into a 26 cm diameter round form (28 cm will also work, don’t take a 24 cm or smaller, it will go over) and stick the apple pieces into the dough (see below):

Mix the cinnamon and the brown sugar and sprinkle it generously on top.
Bake at 180 – 200 C (no convention) for about 25-30 minutes.
