Sun Soup - Aurinkokeitto

This is a typical soup served at day care centres or schools. At day care centres it is often the kids favourite food. It is a creamed vegetable soup and there are no strict rules on what it contains and probably every school kitchen has their own version.
The colour is important, so make sure to add something “red/orange”. The colour of the soup should be dark yellow or orange like the sun and the consistency of the soup should be smooth and no chunks. Like most Finnish soups rye bread with a good dose of spread or butter goes alongside.
I must admit that I did not stick 100% to the recipe, i was running short of carrots, so my soup turned out a bit more yellow. Feel free to add cream cheese or processed cheese.

Ingredients:
1 l water
400 g of mealy potatoes
400 g of carrots or sweet potatoes (or mix of thereof)
200 g of swedes (turnip)
100 g of parsnips
1 small onion
2 cubes of vegetable stock
4 dl cream + a bit of cream for decoration (get out your barista skills)
Instructions:
Peel the vegetables, cut them into large pieces and cook them soft together with the vegetables cubes. Take off from the stove and add the cream. Smoothen the soup with a hand blender, make sure no large pieces are left. You can decorate the soup with a splash of cream or creme fraiche.
Green stuff is usually not put on top of it, looks to healthy for kids......
