Cheese Reindeer Soup – Juustoinen Porokeitto

This is a filling soup which is perfect for a day in November when the sleet is falling outside and the darkness is ruling. If you live in a country where Rudolph only visits once per year and a detour via the kitchen is not on the program, then you can replace the reindeer sausage with any game-salmi. The taste will be slightly different, but still very good.

Ingredients:
75 g Butter
1 dl Flour
8 dl Water
2 dl Full-fat cream
250 g Processed cheese (if you find a strong flavoured one, even better)
150 g Smoked reindeer sausage (cut into tiny pieces)
Black pepper
Parsley
Instructions:
Melt the butter in a pot, add the flour and let the flour absorb the butter. Add slowly the water and whisk constantly to avoid lumps. Add cream and processed cheese and let the cheese melt. Stir constantly to avoid that the soup burns on the bottom. In the end add the reindeer. Adjust taste with black pepper and check if saltiness is ok.
Decorate with parsley and service with fresh bread.
