Cinamon “S” - Kaneli Ässät

Those simple cookies are an all-time favorite in Finland. Excellent with hot coffee or hot chocolate.

Ingredients:
200 g Butter (soft)
2 dl Sugar
2 Eggs
5 dl Flour
2 teaspoon Vanilla sugar
2 teaspoons of Cinnamon
1 teaspoon Baking powder
Covering:
½ dl Sugar
2-3 teaspoons of Cinnamon
Instructions:
Whip the butter, vanilla sugar and the sugar fluffy. Add the eggs one-by-one. Mix in a different bowl the cinnamon, baking powder and flour. Carefully mix the butter and the flour mix. Check if the consistency is good and the dough is not sticky. Add a bit of flour if needed.
Put into the fridge for at least an hour (or outside for most of the year, if you live in Finland, but remember birds and squirrels).
Cut the dough into small “worms” in the size of your little finger (remember they will increase size in the oven). Roll in sugar-cinnamon mix and put into S-shape on a baking sheet.
Bake for 10-12 minutes (depending on the size of your “S”) at 200 C (bottom and top heat). Let them cool on the rack, as they break easily when still warm.
