Yam Slice Cookies – Hilloviipaleet

These pieces are typical “Swedish grandmother” cookies. They taste of almond and raspberry and fit perfectly to a nice strong coffee. You can also use another yam, but the “classical” version is made with raspberry yam.

Ingredients:
200 g Soft butter
1 ½ dl Sugar
1 Egg
4 dl Flour
1 Teaspoon Baking powder
Bitter-almond aroma
200 g Raspberry yam
2 dl Powder sugar
1 Tablespoon water
Instructions:
Beat the soft butter and sugar until foamy. Add the egg and beat it in. Add the flour and baking powder mixture and mix together. Add the almond or bitter almond flavouring. Mix until the dough is smooth. The consistency should be quite soft.
Divide the dough into three or four pieces. Roll each piece into a long strip and place on a baking sheet lined with baking paper. You will need two baking trays, as the strips will extend a lot during baking. Use your finger to make a dent in the middle of the strip and squeeze the marmalade into it. Bake the strips in a 200 degrees oven for 12–15 minutes. Let them cool a bit on the tray (if you move them while they are still warm, they break).
Let the slices fully cool. Mix the powdered sugar with water until you get a thick but pourable paste. Pour the mixture next to the marmalade stripe. Cut the bars into slices with a sharp knife, while still warm.
