Semolina porridge is pretty popular in Finland. Often it is crowned with a butter-eye (some good dollop of butter into the middle of the bowl) or topped with sugar, berries, yam or honey. In old times (before the general health-food-wave), butter was a common Finnish expert and trade good to be sold. Butter usage was something special, so many old people remember fondly the butter-eye in their porridge. If you prefer a more healthy version add some fresh blueberries or lingonberries.

Ingredients:
1 l Milk
1 ½ dl Semolina
½ tsp Salt
Instructions:
Bring the salted milk to boil and wisp in the semolina slowly, so it does not clump.
Reduce the heat and cook the porridge for 8-10 minutes. Don’t leave the pot or browse your phone, the porridge will burn at the bottom. Stir regularly, serve hot.
Serve with butter eye (traditional) or sugar, berries, yam or honey.
Goes best with ice cold glass of milk.
