Avocado Pasta - Avocadopasta

This is a newcomer to the Finnish cuisine. Avocado became popular in Finland with the publishing of an Avocado pasta recipe in 2012 in social media and Finnish news papers. There was some discussion on the real origin of the recipe, but people loved it, and it spread quickly. After that Avocado became a stapple food for Finns and can be found nowadays even in remote places and small supermarkets. It is a quick recipe which many working people do for a quick dinner, called “arkipäivän pelastaja” (working-day-saver).



Ingredients:

2 Garlic clove

1 Chili (medium hot)

1 Lime (best organic) or lemon

2 Soft Avocado (important that the avocado is soft)

½ dl Olive oil 

Salt

½ - 1 Teaspoon freshly grated black pepper

1 Bouquet of basil finely hacked

80 g + 20 g Grated parmesan (or a mix of parmesan and pecorino)

Few leaves of basil

500 g Spaghetti


Instructions:

Cut the garlic and chili into small pieces. Add olive oil, pepper, salt, basil and 80 g parmesan. Mash the avocado together with the lime juice, so it does keep its nice colour.

Cook the spaghetti in salted water. Keep 1 dl of cooking water, when the spaghetti are ready. Mix sauce with cooking water and to the spaghetti. Check if salt level is nice (depends also how salty your cheese is).

Decorate with the 20 g of Parmesan and a few leaves of basil.
